| Chicago Style Deep-Dish Pizza

INGREDIENTS:
½ mild Italian sausage
1 red bell pepper or green bell pepper, cut into strips
1 thinly sliced onion
1 tablespoon olive oil
1 garlic clove, finely chopped
2 tablespoons pepperoni, thinly sliced and cut into strips
1 teaspoon basil
1 teaspoon oregano
¼ teaspoon black pepper
1 (10 ounce) package refrigerated pizza dough
½ cup pizza sauce
2 tablespoons parmesan cheese
2 cups shredded mozzarella cheese

DIRECTIONS:
Preheat oven to 425 degrees.
Remove skins from sausage and cook in heavy skillet, crumbling as you cook.
Remove sausage to plate covered with paper towel to drain.
Remove fat from skillet.
Sauté sweet pepper and onion in olive oil in the same skillet over medium heat for about 5 minutes, stirring occasionally.
Add the garlic and cook for another minute.
Add pepperoni, basil, oregano and black pepper; cook another 2 to 3 minutes, stirring occasionally.
Unroll pizza dough and place in well-seasoned 10-inch cast-iron skillet.
You may need to stretch slightly so dough comes up about 1 inch on the sides.
Spread dough with 2 tablespoons of the pizza sauce.
Spread half the vegetable filling evenly over and top with half of the sausage.
Sprinkle with 1 tablespoon Parmesan cheese and dot with 3 tablespoons sauce.
Top with half of the mozzarella cheese.
Repeat layering again.
Bake in preheated oven for 15 to 20 minutes or until cheese is melted and crust is golden brown.

INGREDIENTS:
1 (8 ounce) package cream cheese, softened
1/2 cup blue cheese salad dressing
1/2 cup Frank's® RedHot® Original Cayenne Pepper Sauce or Frank's® RedHot® Buffalo Wing Sauce
1/2 cup crumbled blue cheese or shredded mozzarella cheese
2 (9.75 ounce) cans Swanson® Premium Chunk Chicken Breast in Water, drained
Assorted fresh vegetables or crackers

DIRECTIONS:
Heat the oven to 350 degrees F.
Stir the cream cheese in a 9-inch deep dish pie plate with a fork or whisk until it's smooth. Stir in the dressing, pepper sauce and blue cheese. Stir in the chicken.
Bake for 20 minutes or until the chicken mixture is hot and bubbly. Stir before serving. Serve with the vegetables and crackers for dipping.

12 fluid ounces tequila

Pour limeade, tequila, water, and beer into a large pitcher. Stir until well-blended, and limeade has melted. Add plenty of ice, and garnish with lime wedges. Adjust with additional water, if needed.

Grilled Lobster Tails

4 fresh lobster tails
melted butter
lemon juice

Remove membrane from under side of tails.
Insert skewer lengthwise to prevent curling.
Start with shell side down on the grill. Brush meat with melted butter.
Turn and grill other side.
Cooking time will vary from 5-10 minutes per side, depending on size of tails.
Serve with melted butter laced with lemon juice.

INGREDIENTS:
8 cups tortilla chips, home-made or store bought
½ lb. lean ground beef
½ lb. chorizo sausage, casing removed (or use 1 lb. ground beef)
1 large onion, chopped
salt
liquid red pepper seasoning (Tabasco)
1(1-2 lb.) can refried beans
1 (4 oz.) can whole green chilies, seeded and chopped
2-3 cups shredded monterey jack cheese or mild cheddar cheese
3/4 cup prepared green taco sauce or red taco sauce
1 medium avocado, peeled, pitted and coarsely mashed (garnish)
1 cup sour cream (garnish)
¼ chopped green onion (garnish)
1 cup pitted ripe olives (garnish)
1 mild red pickled pepper (garnish)
chopped fresh cilantro

DIRECTIONS:
Crumble been and sausage into a wide frying pan over medium-high heat; add onion and cook, stirring to break up meat, until meat is lightly browned.
Spoon off fat; season to taste with salt and hot pepper seasoning.
Spread beans in a shallow 10x15-inch baking pan or oven proof dish.
Top evenly with meat mixture, sprinkle with chiles and cheese, then drizzle with taco sauce.
Bake, uncovered, in a 400° oven for 20-25 minutes or until very hot throughout.
Meanwhile, prepare garnishes of your choice.
Remove pan from oven and quickly garnish, mounding avocado and sour cream in the center, and adding other garnishes as desired.
Quickly tuck tortilla chips around edges of bean mixture and serve immediately.
If desired, keep platter hot on an electric warming tray.

- In a small bowl, mix together the avocados, sour cream, cream cheese and salsa. Blend to desired consistency.
- In a small bowl mix the salt, pepper, garlic salt and onion powder. Stir into the avocado mixture. Cover and chill in the refrigerator 1/2 hour before serving.

2 tablespoons vegetable oil
2 onions, chopped
3 cloves garlic, minced
3/4 pound beef sirloin, cubed
1 (14.5 ounce) can peeled and diced tomatoes with juice
1 (12 fluid ounce) can or bottle dark beer
1 cup strong brewed coffee
2 (6 ounce) cans tomato paste
1 (14 ounce) can beef broth
½ cup packed brown sugar
3 ½ tablespoons chili powder
1 tablespoon cumin seeds
1 tablespoon unsweetened cocoa powder
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
1 teaspoon ground coriander
1 teaspoon salt
4 (15 ounce) cans kidney beans
4 fresh hot chile peppers, seeded and chopped

DIRECTIONS:
Heat oil in a large saucepan over medium heat. Cook onions, garlic, ground beef and cubed sirloin in oil for 10 minutes, or until the meat is well browned and the onions are tender.
Mix in the diced tomatoes with juice, dark beer, coffee, tomato paste and beef broth. Season with brown sugar, chili powder, cumin, cocoa powder, oregano, cayenne pepper, coriander and salt. Stir in 2 cans of the beans and hot chile peppers. Reduce heat to low, and simmer for 1 ½ hours.
Stir in the 2 remaining cans of beans, and simmer for another 30 minutes.

| Buffalo Chicken Wings I

1 quart vegetable oil for deep frying
24 chicken wings, tips removed and wings cut in half at joint
4 tablespoons butter
1 tablespoon distilled white vinegar
5 tablespoons hot pepper sauce
salt and pepper to taste

DIRECTIONS:
Heat the oil In a large skillet or deep fryer to 375 degrees F (190 degrees C). Deep fry chicken wings in oil until done, about 10 minutes. Remove chicken from skillet or deep fryer and drain on paper towels.
Melt the butter in a large skillet. Stir in the, vinegar and hot pepper sauce. Season with salt and pepper to taste. Add cooked chicken to sauce and stir over low heat to coat. The longer the wings simmer in the sauce, the hotter they will be. Serve warm.
