Three Healthy and Easy to Prepare Fruit Salad Recipes to Enjoy This Summer

Summer may be the time to indulge on enjoyable treats and barbecues, but 'healthy' can still be incorporated into your dining options. Here are three summer fruit salads that are healthy and delicious; and what's best, you can bring it to the BBQ!

 

Orange, Fig, and Gorgonzola Salad

Prep: 15 min. / Serves: 4 / Calories: 141

Ingredients

  • 2 heads romaine lettuce, chopped
  • 2 oranges - peeled, pith removed, and cut into segments
  • 1/2 cup crumbled Gorgonzola cheese
  • 2 fresh figs, cut into 1-inch cubes
  • 1/4 cup vinaigrette dressing, or to taste

Directions

Prep: 15 min. / Ready In: 15 min.

Combine lettuce, oranges, Gorgonzola cheese, and figs in a large bowl. Drizzle dressing over salad and toss to coat.

  • 2/3 cup fresh orange juice
  • 1/3 cup fresh lemon juice
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon grated orange zest 
  • 1/2 teaspoon grated lemon zest
  • 1 teaspoon vanilla extract
  • 2 cups cubed fresh pineapple
  • 2 cups strawberries, hulled and sliced
  • 3 kiwi fruit, peeled and sliced
  • 3 bananas, sliced
  • 2 oranges, peeled and sectioned
  • 1 cup seedless grapes
  • 2 cups blueberries

Directions

Prep: 25 min. / Cook: 5 min. / Ready in 3 hrs. 30 min.

  1. Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  2. Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

Strawberry-Melon Summer Salad

Ingredients

  • 1 cup lemon yogurt
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • 2 cups watermelon balls
  • 2 cups cantaloupe balls
  • 2 cups halved strawberries

Directions

In a salad bowl, whisk together the lemon yogurt, honey, and lemon juice until smooth, and gently fold in the watermelon balls, cantaloupe balls, and strawberries. Toss to coat, and serve.
